Ingredients:

  • 1 Cup NUCO Vegan Mayo
  • 2 Tbsp NUCO Coconut Cider Vinegar – Coconut syrup flavor
  • 1/3 Cup brown sugar
  • 3 Cup small diced broccoli florets, steamed or raw
  • ½ Cup dried cranberries
  • ½ Cup apple, diced
  • ½ Cup cooked bacon, crumbled
  • ½ Cup walnut, crushed
  • ½ Cup red onion

#COOKWITHNUCO Directions:

  1. Mix the broccoli, bacon, walnuts, cranberries, apples, and onions in a large bowl
  2. In a second bowl, gently combine the vegan mayo, coconut cider vinegar, and brown sugar until smooth
  3. Before serving, toss the salad with the dressing to allow flavors to meld
